Ingredients:

For the cobbler:

1/2 cup butter (cut into chunks)

1 cup all-purpose flour

1 1/2 tsp baking powder

1/4 tsp ground cinnamon

1/2 cup maple syrup (or any sweetener of your choice)

1 cup milk kefir (or substitute with regular milk)

1 tsp vanilla extract

1 (28 oz) can of peaches in syrup

Optional topping:

1 tbsp brown sugar 1/2 tsp cinnamon

Instructions:

1.Preheat your oven to 350°F (175°C).

2. Melt the butter: Place the butter chunks in a 9×13” baking dish and set it in the oven while it preheats to melt.

3.Mix the batter: In a bowl, whisk together: 1 cup flour 1 1/2 tsp baking powder 1/4 tsp cinnamon Then add: 1/2 cup maple syrup (or chosen sweetener) 1 cup milk kefir (or regular milk) 1 tsp vanilla extract Whisk until smooth.

4. Assemble the cobbler: Once the butter has melted, remove the pan from the oven. Pour the batter over the melted butter (don’t stir it all the way in). Slightly swirl with a spatula. Then pour the entire can of peaches with the syrup evenly over the top.

5. Optional topping: Mix 1 tbsp brown sugar with 1/2 tsp cinnamon and sprinkle over the top for a sweet and spiced finish.

6.Bake: Bake for 20–25 minutes or until the top is golden and the cobbler is set.
